"Jägerbär" is literally just "hunter bear" Can´t believe the show (I think?) still hasn´t given us "Blutbad"s name! But I love him, he is one of my favourite characters. I think the dad noticed that Nick saw his son shift, so that´s why he knew he was a Grimm and reacted like that and told him to call his office.
