2025-01-16 00:17:16 +0000 UTCUm. The Maillard reaction 100% happens in deep frying. It’s literally why things are crispy and brown when they come out of the fryer. I’m glad you know the word, but what it actually refers to is the crystalization and caramalization of the carbohydrates and proteins due to heat. In a pan, this only occurs where the surface of the food is touching, because the air can’t hold enough heat to cause the reaction. In oil, this can happen over the entire surface as long as the oil is over about 250 degrees F. Not trying to be shitty here, but providing “knowledge” even in jest and fun without looking it up, just normalizes being confidently wrong and encourages the Alex Joneses of the world. Just my 2c. You guys are still awesome.

Foster. Definitely helped me in that respect. Quick cheat, though: In western literature, if it isn't based on Greek or Roman myths, it's probably based on the Bible.
