The author shared a message telling us that the series was green lit to have an anime somewhere at the start of season 2 then add production + the time it took the anime to air + the hiatus in between (and then the anime just skipped most of the manga content anyways ^^' - guess that's why they were waiting though, couldn't skip all of the things they skipped if they aired it earlier)
