So I know this was a while ago but I actually have one of these pans and the damage I feel is probably due to transport because mine came in pristine. And while it's a bit overpriced for what it does it's still a pretty good pan.

Everyone buys super-expensive knives. Do what I do - buy knives from a thrift store and get good at sharpening. Gordon Ramsay once sharpened his own knives at a ren fest on the brick stove.

I only learnt about this recently because I don't have a gas stove - might be worth checking the gas flames as it looks like they're not getting enough air (yellow flames). Mostly a concern if you haven't got the exhaust turned on whilst cooking. Love the vids, keep them coming.

My cast iron pan (not Always Pan) is really good at holding heat but I've just grown accustomed to keeping an oven mitt nearby for if I need to move it while cooking! Also I feel like at that price point, it needs to at least be oven-safe.

@13:45 So, do you think guys will burn themselves on this more for not being able to 'find the notch?'

I feel like more is better in a kitchen, so condensing it all into a single vessel seems counter intuitive. Especially if you're cooking multiple things at once, wouldn't want to buy several of these just to finish a meal in less than 30 minutes.

Seems like you'd benefit from an oven mitt, rather than trying to hold everything in the air with spatulas.
