Looking at them at the end of the video could be a thing for you to do, so you can see how bad it gets. This part that you are scraping the surface of now is where some people say "the real One Piece starts" and is where it gets cemented as a great show for them. Others disagree. I'll let you make up your own mind, but my guess from what I have seen you enjoy is that you will love it. I am excited to see what you think of next week's episodes.

So the order of the Straw Hats is as follows: 1. Luffy 2. Zoro 3. Nami 4. Usopp 5. Sanji 6. Chopper 7. Robin

Luffy fights when someone gets in his way or threatens his love ones. For example, if Bellamy had attacked Nami or physically tried to stop them from going to the Sky Island, Luffy would have destroyed him.

Most of the time, the point is to have the characters' dreams conflict, and by winning, you prove "your dream is stronger" so to say. Fighting someone for a reason other than your dreams conflicting, would be akin to mindless violence, so to the strawhats, that wouldn't make sense, since defeating them proves nothing.
