You actually have seen baroque works in live action, when they first show Zoro, a baroque works person came to try and recruit him,( another one of the things you talked about,small spoilers that the live action offered sadly, even if you guys don't remember the spoiler ahaha)

4Kids had no qualms about ruining continuity, so things that are changed there should mean nothing to you. They just wanted a "kid friendly" show on their network, and let's be honest, One Piece is a terrible choice for that so they had to change a lot. They probably realized it themselves and that is part of the reason they only got to 143.

The One Piece planet has been estimated to be as big as our sun, and it’s made of mostly water. Without the log pose we would navigate an enormous quantity of ocean between an island and another with no direction or logic, as the weather and natural phenomena in the grand line have no logical sense. The log pose will point in the direction of an island whose magnetism it caught more than others. Once you reach the island it takes an uncertain amount of time for the log pose to ‘forget’ the previous magnetism and catch a new one, aka a new island. Basically we don’t know where we are going, but at least we are going toward an island.

In the One Piece Live Action, we are introduced to Zoro when a mysterious assassin named Mr. 7 tries to recruit Zoro, and we see the symbol of Baroque Works in his business card. This is what Zoro was referring to when he said they had tried to recruit him before.
