Small correction that maybe has some bigger implications BUT there aren't different smells of the witches. The reason betelguese thought that Subaru was pride was cause (according to betelguese), pride was the only vacant spot in the witch cult. We also know from before that the scent has a strong connection to the powers, such as subaru stinking more when mentioning return by death or that he smells more just after coming back.
