I love that you reacted to this! The reason they didn't do the whole song is because they were performing the musical in this episode and only had time to show snippets of each song. The guy who played Sharpay is Joe Serafini. He's one of the most technically trained singers on the show and you can definitely hear it in this performance! You haven't seen him in anything else, because this was his first professional job. He was actually still in school for musical theater at the University of Michigan while filming the first season of the show. Yes, I think it's hard narratively to justify doing more with the Stick to the Status Quo than what we were shown here, since this was the final episode of the season and we needed to wrap up story arcs outside of the actual performance. I love the casting choice of a male Sharpay, but I do believe it is one of those "blind casting" situations where it is not acknowledged in the musical itself. But even then, a male Sharpay isn't even beyond the scope of "status quo" since the original HSM movies heavily imply that the athletes think that musical theater is ~ gay ~ (actually, that is kind of the whole allegory in the first movie tbh). So, having a boy instead of a girl reign over the drama club is a fun revamp, but not that non-status-quo-y, at least clique-wise. Also, important to maybe acknowledge about the original musical was what motivated that number in the first place is that Troy, basketball star and captain, wants to sing and go out for lead in the school musical, which is against ~ social rules, ~ for reasons seen above, so the stage version I imagine operates similarly.
