No particular reason! She's smug, athletic and irritable, and Peep there was having a sale. They did the bonus art for Kitchin the goblin streamer too. I realize it's also hard to depict Beet Walker as being part saiyan. The usual giveaway people have with saiyan/half-saiyans is their big spikey hair or their tails, but Beet's got an afro and canonically had her tail taken off as a baby. Still adore her and got some fic in the works for her somewhere down the line, cuz know how folks love her.
