As for Roswaal beating the piss out of Subaru instead of killing him, he's still unaware of his ability to return by death and wanted to see how he would escape/restart. Because if he knew, he would have easily snapped his neck. Oh btw. You're right. That young girl (who turned out to be a mabeast-breading witch cultist) was one of the village children from Season 1. She was the owner of the demon dog. Surprise surprise. She was behind the attack from the get-go. Great twist.
