Last part of your synopsis about assassin is a huge spoiler. Though, it doesn’t really matter if they know who archer is since I highly doubt they’ll look up who gil is

So servant summoned are based on their legend & lore. The assassin servant is Hassassin, which for simplification can be describe as the personification of assassins. It make sense because successful assassination attempt in history are always carry out by unknown individual or group of people hidden in secrecy.

They're called "Servants". Kirei staged the death of his Servant, "Assassin", so that he could pretend to be out of the Grail War and seek asylum in the church. He's working with Tokiomi (Rin and Sakura's dad), who trained him in magic. So, to stay out of the way and use Assassin to gather information, he's faking being out of the battle. The thing is, his Servant is all of the members of a tribe of assassins. So it's a Servant composed of many other Servants. He sacrificed one of them against Archer (Gilgamesh), for this whole plan. Which is why he was disappointed that not all of the other Masters had been watching the ruse.
