The reason bending didn't really work like that for the characters in ATLA is most of the people we saw were once in a generation prodigy's or eugenics created royals. Also generally the entire world can do more with less movement now beyond the MMA work, I think cause of world stuff we learn later but that's never said specifically.

Probably why Korra acts like that is because she grew up training non-stop (I think) in a secluded, gated place in the South pole. Remember in the first episode she has to ask permission to take a stroll out with her polar bear dog. Even in Air Temple Island she's still being guarded by White Lotus peeps. Here it's like she's seeing the rest of the whole world through the city and she wants to discover a lot of things and be more free in a sense.
