Chrollos abilities were never fully explained in the anime nor the manga but is explained on his character bio.
For Chrollo to steal a Nen ability from another Nen user four conditions must be met:
1. He must witness the Nen ability in action with his own eyes.
2. He must ask about the ability and be answered by the victim.
3. His victims palm must touch the handprint on the cover of Bandit's Secret.
4. All of the above must be completed within an hour.

He didn't turn the job down. He DID kill one for a job, that's how he met Chrollo, but he thought he got paid too little for the effort. Not really pride either. They just do the job they are paid to do to the best of their ability as efficiently as possible. Illumi's job was simply irrelevant to their job.

I think you misunderstood the Zoldyks past experience with the spiders. Killua said that his father was once offered a job to kill one of the spiders(maybe multiple or all I can't remember) but Silva turned the job down saying the job wasn't worth the money offered and he warned Killua to stay away from them. I'm guessing the 10 Dons paid a lot more money than the past offer so they decided to take on the job this time. I'm not sure if its a matter of money or pride that drives them to do what they do, as Imon said Zeno and Silva were aware that Illumi who had Kalluto(Killua and Illumis younger brother who can easily be confused as a little sister) with him were hired by Chrollo. Even then they were still so committed to killing Chrollo that Zeno told Silva not to hesitate to do the finishing blow even if it meant killing him as well. I don't believe he would sacrifice himself just for money hence why i think its more about family pride since the Zoldyck family have been assassins for generations.
