As far as Winry's "Have his shoulders always been this broad?" line, I definitely know theres a romantic element to it but I like to think of it as until now, Ed's always been weighed down by the burden of thinking he killed his mom a second time. Knowing what he does now and having his hope renewed he's able to stand taller and prouder than before.
