But I would just recomend twice a week because at some point it will be easier to keep up/remember what's going on that way. But it's all good either way

As for dub vs sub, i wouldn't actually mind if FMA:B is watched in dub, the dub is actually REALLY good, one of the best, if not the best. But HxH needs to be in subbed for sure. The HxH dub is so bad lmao.
