ok so i can still just follow the canon right with no problem?

As Groudonvert pointed out, the next canon episode marks the start of a stretch of canon episodes that are more centered on character development, while also being largely uneventful, although there is a clear distinction between the two. Looking through forums, it seems a lot of people have questioned this sudden shift in focus. I’m not sure if this was ever officially explained, but one of the leading beliefs is that the Bourbon Arc underwent extensive rewrites during this point, potentially to integrate a new character based off of another character from the past that unexpectedly became a fan favorite (namely, Natsuki Koshimizu, from the Detective Koshien special, EP 479). I remember watching a YouTube video that went into detail about this, but I can’t find it. Funnily enough, as I was going through a forum that discussed this, I came across a comment from someone who split the Bourbon Arc not into two parts, but into four acts instead, to highlight the four notable movements: Act I: 509-581 Act II: 583-645 Act III: 646-704 Act IV: 705-783 (of course, many already consider this stretch of episodes to be Part B of the Bourbon Arc, so really, it’s just Part A being split into three smaller parts). For Act II, 24 canon episodes are more focused on character development, and they’re really good. The main event is no doubt the six-parter (616-621). Massive for the main story, it also has OVA 11 tied to it. Now, for the remaining 16 canon episodes, the Important Episode List I’ve referenced before actually skips them, since nothing really happens lol basically filler episodes disguised as canon episodes, as groudenvert put it. Granted, this concept is nothing new with Detective Conan, it’s just more noticeable, probably because Gosho was rewriting the story during this point. They’re not bad though, it’s just that they’re largely uneventful. For what it’s worth, there’s a two-parter I’m surprised is even included considering who shows up, another two-parter that is a Conan/Kogoro case, and honestly I really like the dynamic, and a third two-parter which is sorta worthwhile to watch mainly because it includes an element of Japanese culture that one of the later movies centers around. As for skipping any of these episodes, I personally wouldn’t recommend it, but if you decide to do so, then ask us about it. Other than that, best of luck.

By the way, it's the last cannon episode centered on the main story before a really long time. Some episodes are centered on the characters (like the next couple of episodes) and a couple of really good cases, but the main story doesn't come back before episode 616. So if you want to skip a bunch of episodes, feel free to ask which episodes are complete filler disguised as Cannon episodes. Sadly, The Bourbon Arc is a bit of a mess in his (very long) first half.
