I don't see how Canute feels he strayed one bit since his original goals. He said it himself in S1, he will create a paradise on earth even if he has to become a demon to do it. He currently took charge of the vikings and while doing so is slowly changing their aggressive ways.
You can see it like this: Imagine the Vikings are like a moving machine. Canute decided to take control of it and is trying his best to put it to a stop. Of course, while you are pulling the machine, it will still go a few steps further. But he is slowing down the machine for sure. Were someone else in charge other than Canute and the Vikings would still be attacking mercilessly some other territories. It's not like anyone could simply take charge and disband the viking philosophy all together instantly
In my view, the "demon" part he mentioned is the fact that he will have to play the Vikings game in order to take control of them and be able to influence them, which means making decisions to kill people. But again, were some other King in charge and it would be way worse because no one cared about trying to stop the machine, only take advantage of it.

I feel like Thorfinn acts as a reminder of how far he has strayed from his original ways/goal. I don't think he wants to face him, and be faced with all the promises he made and have Thorfinn see what man he has become. And welcome back btw. Hope you had a great vacation :) I went to Italy for my bday while you were gone, so I got to travel alittle bit myself :)

for Canute last time he saw Thorfinn he tried to kill him and ended slashing his face and Canute sent him to slavery afterwards, so it make sense for Canute not wanting to meet him because he might attack him again

I imagine that Canute didn't want to see Thorfinn because he tried to kill him the last time he saw him and Thorfinn was the guy Askeladd sent to get stuff done. Plus he's the reason Thorfinn ended up a slave.
