The scene where Viktor and Jayce are arguing about creating weapons with Hextech and Jayce says "we might not have a choice", Viktor is simultaneously trying disarming the grenade. Where you're wrong is that he wasn't "lucky", he knew exactly how to disarm it and which wire to cut; his pause before doing so was because he didn't know whether he should do it or not. He actively decides to disarm the grenade, and hence right after he does he replies to Jayce "there is always a choice".
