If he'd inherited it solely from Jonathan, it would make no sense for George not to have also had it. Whereas with Lisa Lisa being a hamon master, Joseph would have been exposed to the rhythm of hamon breathing whilst in the womb, so it makes sense that it would come naturally to him.
