And they talked about this for a sec in chat but we’ve met cellphone-san before. He was the antique rotary phone that Zelretch was talking to in the fate strange fake post credits scene. Cellphone-san is better known as Caubac Alcatraz and his lore is bonkers.
Caubac was a devout member of the Holy Church until he got turned into a dead apostle about 2000 years ago. Right after he vamped out he went into hiding and spent his time writing a thesis about god’s love. Once he finished his thesis he realized he accidentally created a scale model of the entire universe, which he named Triten. naturally, Triten gained sentience and managed to escape the inescapable labyrinth Caubac built to protect it. Once Triten came to the human world, it changed its name to Hibiki and now she spends her days with her best friend Chikagi working at a cafe and as one half of the HibiChika duo.

Hibiki and Chikagi were the mascots of Type Moons now defunct mobile site, they also started in a CD Drama called Mahou Tsukai no Hako that also had a one volume manga spin off. They also just got added to FGO JP this year.
Koha Ace is a web gag manga, it had a bunch of spin-offs and tie ins like Fate/Koha Ace and GudaGuda ACE both of which were the inspirations for the Fate/Type Red-line Manga and the GudaGuda events in FGO
Saber and Arcueid are considered the main heroines because they are the faces of there respective franchises, and the first routes you do in each VN.

I don't know if you realised this, but in the ending, when the chibis of the characters appear, we see chibi versions of Fate/Zero characters and Fate/EXTRA characters.
EDIT: Also, you need now to watch Fate/Grand Carnival, which is a 2 episode OVA in the same style of Carnival Phantasm, but with Fate/Grand Order characters.
