Because technically tanjiro isn't just with Nezuko but also collaborating with two other demons. So even just the fact about the Hashiras finding out about the two demons he is working with would be pretty bad to deal with. They are an organization that completely goes against demons which is made pretty clear here and was already stated and shown. So it isn't like they are gonna go collecting blood if they know who is getting it is in fact a demon herself.... Now if Tanjiro could somehow keep that a secret I don't know but it isn't like they are gonna wanna do that without knowing where the blood would be going to.
