I had such hopes....things were going so well...and then...let's just say the fluffy Japanese pancakes are NOT as easy as they seemed in the online recipe!

Things go from bad to worse for Romania this evening!

Honestly?! It SEEMED scary, and then the recipe made it seem juuuuuuuust doable enough that I was like, “Yeah, this will work!” And the moment I realized the egg whites were not stiffening, I was like, “Oh nooooooo” and then it was downhill from there! I remember several episodes of the Great British Baking Show that were focused on the 70’s or “retro bakes” and I know Prue Leith LOVES souffles! That’s awesome that you helped your mother and YES, the “whisking” if not done with a machine (or even with it) is a CHORE. Thank you for the links! I will say, the meringue when I did try it (before I added to the batter and ruined it, haha) was actually really delicious! Ahhhh, I didn’t think about the coarseness of the cane sugar deflating them. That’s probably so true! And yeah, the instructions said for it to be SUPER low heat, which makes sense if the pancakes aren’t…already deflated haha! I do love regular pancakes and making them is fun - I almost got some dyes to try and do “pancake” art - I might make a “Leftover” segment with that (my brother said he’d be a sport if I wanted to try eggs benedict with him haha) and do a doover with the pancakes…just not souffle style! Thank you for your kind words and the comment - honestly, knowing how to cook might be a go-to in the future, but trying to maintain SOME semblance of positivity, but it can be hard, you know? Anyway, thank you for the pancake mix recipe! I may have to try that one!!

I decided to join the living for a bit. And what better way to do it than fluffy Japanese pancakes! You are tackling a challenging recipe! It’s the egg whites. They have to be very stiff and gently folded into the batter. I know I’m not telling you anything you don’t know already. This is a hard recipe and I think every a failure is a triumph because at least you tried. I haven’t attempted this at all! You are right, it is a scary recipe. Now, I spent my childhood in the 70’s and soufflés were all the rage! I did help my mom in the kitchen and I remember her telling me I wasn’t done whisking yet! It is a workout! For me, the rule on pancakes is the first few are casualties. They never turn out well because the skillet usually is not hot enough. Or it’s too hot! I usually have to dial in the perfect temperature. It takes a few ugly pancakes. When I make regular pancakes, I usually know it’s time to flip when you get bubbles on the top of the pancake. With a fluffy pancake, I don’t think that happens. Plus, it looked like it was partially steamed due to the lid on the pan. Anyway, good go of it!
