Y'ALL - this was my favorite recipe so far! It took a LOT of patience, but was SO DELICIOUS! I will definitely be making some cheese and mushroom risotto in the future!

That’s awesome about the video growing mushrooms as well - I’m not sure that I’m that talented to grow said mushrooms hahaha!! I really loved this dish (I’ve made it since this recording and it was just as good)! And that’s awesome about the homemade bread - my mother just started taking bread classes and really likes it! Ahh, I like clams that are “fried” hahaha, but oysters are just too slimy for me - but my brother and father love them! Thank you for the comment and kind words!

So, this is a rice dish that you do not rinse the rice! You want the starch! So, I just got done making this. I did tweak it a bit, and it turned out pretty good! One tip, always keep a bottle of red and a bottle of white wine for cooking. You never know when you may need it! I had sake so I used that. For the liquid I made a mushroom stock. I saved the mushrooms for ramen for later…. I put that shit in everything! I just used regular button mushrooms. Now, I have grown oyster mushrooms before and it is really fun! I bought one of those mushroom kits in a box and there are several brands out there to try. They can be kinda pricey, but it’s a fun thing to do and you can try mushrooms that you might not normally get to have. I love mushrooms!! I stirred for like half an hour and I still think it could go just a bit longer. It is creamy, the rice is not crunchy, and it is al dente. So, it’s very good! I just think I want it just a bit more tender. Well, I have leftovers, so when Husband gets home, his should be perfect! ( he usually makes the risotto, it’s out of a bag though! 🤫) So today I’m also making bread the old fashioned way….. I’ve been at it for almost 24 hours! Time is the flavoring for this bread! Should be done soon. I can’t wait to cut into the heal of a newly baked loaf! 😋 Ok, I love clams! We usually have them for special occasions. I had live clams that were soaking in clean water overnight to remove the sand, and Husband wanted to name them all! He felt sorry for them. But he enjoyed them the next day! So, we clean them, steam them with white wine, garlic and butter! Super simple but delicious! A bit of bread and it’s a delicious meal! Too bad you don’t like them, but, that means more for those who do love them! Hahhahahahahaha! Enjoyed this dish and one that I cooked along with you! So fun!
