please watch season 3, the gaps in the knowledge can be filled by context clues and while it won't make sense at the start, its not meant to so don't feel thrown until you get to the end of season 3. The gaps come later and can be filled by context clues, you will understand what I mean after ep 1.

Glad you enjoyed Tokyo Ghoul, I know people complain about the anime and how its story was handled for seasons 2 and 3. Just so you are aware, season 1 its pretty manga accurate however the pacing was kind of sped up and covered like the first 90-100ish chapters i think.
Season 2 is damn near anime only content with how much they changed. I like it well enough to not complain like a lot of other people but you really see its impact on the quality of the story in season 3. more so on what they left out, not what they changed.
Season 3 is where the show for some reason decides to go and be very manga accurate which is a great thing but its difficult lining that up with season 2, a bulk of complaints come from there. If you're ok with a few gaps in information, i think season 3 would be a great watch. i would say the pacing is probably on par with season 1
