You should assume that everything is always about the love triangle, like literal or subjective but everything have a double meaning with the love triangle. Also, Haruno lines are important in this episode, she's implying that their relationship is not "genuine" but something bad. My first guess watching this ep was codependency, as the 3 of them need each other to feel safe about things. As you said they make a great throuple but something feels off with both Yui and Yukino looking sad at moments.

Mostly the problem is the adaptation, it becomes too obtuse cause it doesn't have the same amount of information as the light novels have. That leads people to misunderstand the show thinking is too deep or too shallow.

Hachiman, Yukino, and Yui are all well-aware of their love triangle, but they avoid talking about it, because they're afraid of destroying their friendship. Haruno says that she finds Hachiman and his love triangle boring. She said the same thing about Hayama in S2E4. "People who can handle anything flawlessly are boring." She was most likely referring to Hayama's not choosing anyone, thereby sustaining even the most fragile relationships flawlessly. Then it is clear what Haruno means when she says that she prefers the old Yukino. Haruno likes people sacrificing friendships to achieve romance. Probably because it proves her belief that no relationship perseveres.
