Keith says that Eren, like Grisha, chose to set his life ablaze. Keith remembers what Carla said about Eren not having to be special and carry such a burden., For Keith it was a burden to think that he could change things, but failed miserably. So I think Keith wanted to honor Carla and protect Eren while at the same time trying to finally make a difference and change something. So Keith tries to sabotage Eren, but to save him from a path of heartache, likely failure, and possible death, because for Carla it was enough that Eren had been born into the world. But Eren perseveres and chooses differently.

Also I think you were confused about the timeline of events. Keith met grisha about 10-15 years before the attack in episode 1. At this stage grisha has not found and killed the Reiss family, he only did that the day that the colossal attacked the wall about 10-15 years after he met Keith

You both seemed very confused by Keith’s character this episode, he was angry at Carla because 1. He has always had a desire and determination to learn the truth of what lives outside the walls and he wanted to risk his life to discover what was beyond. When Carla told him so flamboyantly to stop that was an assault on his motivations as a human being and he took great offence to that, he called her out for being just another person content with living their life in the walls without having any desire to free themselves from the cage they are in, he was angry that she told him to stop trying to help humanity when all she did was flirt with men as a waitress and had no desire to free humanity. He had every right to say that to her. Like you said she took it well and said her quote that not everyone needs to be special, that calmed him down and he left. In the manga there is an extra but where Keith says that his biggest regret is not apologising to her for what he said and he has lived with that for the remainder of his life. He messed with erens gear in season 1 because he wanted to test him, like he said in the forest to grisha, how do you know that this kid is special or not, when he saw erens determination to conquer the fear training he realised that eren was special and allowed him to continue his training
