It really hearkan's back to her Yellow Trailer quote in the beginning which was, "Scathing eyes ask that we be symmetrical, one sided and easily processed. Yet every misshapen spark's unseen beauty is greater than its would be judgement."

"come at me and you'll see im more than meets the eye" but here, unlike its normal meaning, its not talking about a fight. its her internal monologue saying "no! you've got it all wrong thats not what happened! just let me tell you, and you will understand, im not the monster you see before you"
