Just realized re-watching this episode that the reason Toranaga rewarded Omi, Yabushige's nephew, yet chastised his own son for his cannon attack was because his son was the one who was manipulated and "broken to another man's fist", while Omi was the one manipulating and scheming... like Toranaga himself often does. He sees Omi as a potential asset who uses his wits and gets others to do his bidding. Omi isn't perfect, like when he tried to play his uncle Yabushige and offer him the regiment and his uncle snapped at him, but Omi has potential to be another tactical, trickster that Toranaga can mold and use to his advantage.

It's apparently a very fine delicacy and tastes delicious according to a friend of a friend who I know who said it's accurate. Also the scene at the end where Anjin was fixing the rock garden was his way of honoring Uejirou, the gardener who tragically sacrificed his own life since Anjin's words were misunderstood.
