The catholic priest only translated accurately in the beginning BECAUSE Mariko was there and he knew she'd know if he lied, hence why Toranaga wanted her there. The priest's plan was clearly to misrepresent the truth according to what the bishop said to him before he left. Also how badass was it that Toranaga predicted a potential assassination plot against the Anjin that he concealed himself in his room and gave the Anjin his personal room?
