The weapons used for executions were often not particularly great for it, making clean cuts not so common. But if one were especially hated, the executioner could "miss" and do the job poorly, resulting in an especially painful death. What we know from the psychological effects of executions on people, we can easily guess the kind of messed up state of mind any executioner would be in -- especially when considering the time they were in. It's also a well documented aspect of people who work on really messed up victims, burns, impaling, etc. It's traumatizing and can cause one to completely avoid foods that even remotely remind them of those. It's understandable. Spend hours working on a screaming, flailing person whose skin gets pulled off at the touch and you're bound to change.
