Easy: Porsche 718 Cayman Clubsport GT4 for it's improved platform, weight reduction (compared to the normal Clubsport), and superior track performance. If we don't limit ourselves to real cars, I would want the Peugeot Vision Gran Turismo for it's lightweight nature and extreme acceleration.
