The primary reason K. Rool is so popular is because he was the villain in DK's biggest games on the SNES and the N64. Remember that despite his impact DK never had that many games of his own.
As for the terminology, Smash Bros is a lot different from the standard 1v1 fighting games you've picked up recently. Knockback on attacks is even more important than the raw damage your attacks deal, since in most modes you don't get points for just damage. Smash Bros is also in the very unenviable position of having a 82 fighter strong roster in Ultimate with many third party fighters, and while the game was still coming out they went on record to say that the next game will not have as many fighters. And every fighter cut will be somebody's favorite.
And yes, Gangplank Galleon is an absolute masterpiece. Sure it's pretty good in the SNES game, but the Smash Ultimate version is ASCENDANT in its quality.
