It's quite simple. The reason why Meta Knight will never be able to defeat Kirby is because of their narrative contrast. Kirby as a franchise is, at the end of the day, silly and irreverent. Several of the instigating conflicts for Kirby himself after all is people taking away his food, after all. When contrasting this with a character like Meta Knight who carries deeply about concepts of honor, duty, personal skill and self-improvement he just gets curbstomped (or rather: kirbstomped) by a silly little pink puffball: it is what the narrative demands of him. It's the same thing why Vegeta gets his teeth kicked in by Arale in Dragon Ball Super, or why the serious hunter Elmer Fudd never gets the upper hand on toon force incarnate Bugs Bunny (and why when Elmer Fudd faced off against Batman in the surprisingly good Batman/Elmer Fudd crossover comic Fudd managed to fight Batman of all people to a standstill): the serious can never find purchase on the unserious, at the cost of the unserious being vulnerable to yet more unserious. Slapstick does not discriminate, especially not against its own. And because Meta Knight refuses to fight Kirby on an even footing, because he refuses to stop wearing his wings like a cape, because he refuses to remove that ridiculous mask to reveal he's just like Kirby but a shade darker, Meta Knight will never be able to win.
