One thing I think is interesting from the opening of this episode is that it shows two things: Jimmy did indeed take money from the till like Chuck said he did in the previous episode, but based on what Jimmy says here I think it's very likely he didn't take anywhere close to the 14000 dollars Chuck thinks he did. I would guess based off this that the majority of that was just given out by his father in circumstances like what we see here, rather than taken by Jimmy directly. So Chuck blames Jimmy for the business failing but in reality it was probably more that his dad was just not a very shrewd business man and was far too nice/gullible for his own good/for the business to succeed.

Regarding how Stacey was able to qualify for the mortgage, my guess is that in addition to Mike giving her the $50k he received from Hector, and the money that he received for putting Tuco in prison, he was also a co-borrower, even though he's working a minimum wage job. Stacey appears to be a nurse (she's shown wearing scrubs), so she should be earning a decent income. The average real estate price in Albuquerque in 2002 was $161k, so it's plausible that they would qualify.
