Theon understood he did wrong before he was taken by Ramsay. He said as much to Maester Lewin (sp?) and then when Ramsay pretended to save him he said "my real father lost his head in King's Landing" talking about Ned and then tearfully said he "chose wrong" and he wished he could take it all back. So what Ramsay did to him didn't suddenly make him feel contrite and see the error of his ways...he knew it was wrong almost as soon as he made the choice but he'd just "gone too far to pretend to be anything else." His wrong (which was understandable, if not laudable) was choosing his father over Robb. And it wasn't even a choice made from spite or anger or hatred or evil...it was a choice made out of desperation to feel like he belonged somewhere (he and Robb and the Starks were close but Robb reminded him several times that he wasn't a Stark ("it's not YOUR House.") From there, he acted in accordance with his side and his family and made choices to win his father's approval. And he never felt good about them but he just kept slipping deeper into the hole he'd dug for himself. Ramsay didn't make him feel bad for what he'd done. If anything, his guilt about betraying Robb and killing those two orphans (which if I remember right, someone else slit their throats and burned them, even, not him directly), made him more susceptible to Ramsay's torture. He already felt unworthy and that made Ramsay's torturous obliteration of Theon easier. Theon put up less of a fight because he felt like he deserved it. Anyway, yeah, just wanted to be clear on that. He was sorry before Ramsay.
