They got tired of being eaten by leopard seals, like the one Moxxie shot, so they started fighting back. And once they had a bloodlust, they had to satisfy it with something else, like the researchers. As for why the seal looked undead, that's probably how badly the penguins maimed it beforehand. You have to understand, leopard seals are super hardy and vicious, even killer whales sometimes decide they're not in the mood to take them on.
