It's for safety since you strike from the blind spot, but also for your own mental well being because what happens if you see the Hollow's face and you recognize them?? That kind of thing might haunt you, especially if you are the one that sliced them. Worse case scenario after striking from the front is what happened to Ichigo where he sliced from the front and the hollow survived his attack, so now he has to fight a hollow with an identity of someone he knows which means he hesitated to kill it. He might have lost and died after he hesitated if Orihime had not jumped in the way.
