You realize that logically speaking just because he ate a fruit that gives him multiple heads, it doesn't mean he cannot be decaptitated in one blow in his human form? It makes far more sense to assume that in human form every neck and head have fused into one, so the logic to say it shouldn't kill him is purely fantasy logic with no real reasoning behind it. Also... you have to also ssume that he can just lay there with one of his heads cut off without yelling in pain or bleeding out? Doesn't seem in character for Orochi when he is so dramatic. Fact is, it is One Piece logic that you just have to accept despite it making not much sense logically. You cannot blame Jack for not predicting something that should be impossible... he did not know the fruit lets you survive decapitation in human form. Nobody could have known that for sure, and it made no sense to automatically assume that. It can be guessed at this point how he survived, but I would not say it is obvious since they have not hinted at how he survived at all and kept it completely vague.
