Yeah, the Admirabilis are supposedly the "flesh" and, being animals that reproduce, they use gendered terms to refer to each other. The gems are aware of sex and gender from studying other animals, but they themselves do not use any sort of gendered language. I will never get tired of how horrific the concept of losing body parts to lose memories is. Every little crack, every bit chipped off, could take away a memory from them. Yes, they are truly immortal and can be perfectly restored if you collect every fragment, but every piece you lose is a fraction of the individual that cannot ever be restored. You could toss them into a blender and make a million fragments, but with enough time they could be restored perfectly even hundreds of years later. Yet every piece you fail to reconnect is a portion of their memories lost. To answer your question about the rules for which gems contain memories, it's the microorganisms called "inclusions" that contain their consciousness. It's spread throughout their entire body mostly equally. That's exactly why they can be restored from fragments like Phos was, at some point collecting enough pieces simply remakes their consciousness as a whole. It's never directly stated in the anime, but it's pretty likely the head contains a significant portion of the inclusions. Most characters that lose their heads later on are reawakened only after the head is reattached. Which at least suggests the majority of their consciousness is stored there, even if their memories are spread evenly throughout the body.
