My suggestion is to keep this slot for that and just watch everything like Apocrypha, Grand Order, Prisma Ilia, Kara no Kyoukai, etc...... After Heaven's Feel I mean.

Different characters get spotlights, and different things get told to the player in each route, so you learn new stuff each time. But you also never get a complete understanding until you've seen them all.

And that guy towards the end was actually Waver from Fate/Zero, only ~12 years older and "established" at the Clock Tower :D Don't blame you for not recognizing him, he looks and sounds totally different after all. He is the main character in the series Case Files of Lord El-Melloi II, and Luvia appears there as well. For the Visual Novel, I would go for the Remaster that recently (this year) came out on steam. Yeah, it doesn't have the H-scenes (I think?), but it has some nifty additions compared to the original or Realta Nua, namely the flowchart, and maybe some extra art and stuff? Anyway, the H-scenes in the Fate route and UBW are really not necessary, i like the replacement scenes they put in instead (already in the Realta Nua version) a lot more. For Heaven's Feel, you could go either way, I prefer the H-scenes here personally as they give the story a slightly different nuance (though the scenes themselves are still pretty bad), but the replacement scenes are fine as well! And yeah, Sunny Day is the second ending of the UBW route (though it is just as much canon as the other ending). Rin makes another pact with Saber, this time without the help of the Holy Grail. You only get this ending if you focus on Saber during your choices in the VN even though it's the Rin route. As a Saber fan myself, this is the ending i got first in my VN playthrough :D My interpretation on why Rin only does it in this ending, is that she notices how focused Shirou (well, the player of the VN) is on Saber, and she thinks SHirou would be really sad and down if Saber disappeared. So Rin takes a risk and tries to make another contract with Saber without the Holy grail here. By the way, i definitely would watch a DeliveryMat read/playthrough of the Visual Novel (the Fate route + Last Episode at least, not sure if you would want to also do UBW and Heaven's Feel after watching the animes).
