Thing is in the novels he did change part of himself into a tree to beat gilitinecutter. he was a full fledge vampire and shapeshifting/materization is part of their powers.

He prevents a suicidal person from dying and she keeps his savior complex in check by being the one he he can save every day, thus making them somewhat functional

The way he defeated the third guy was completely impossible for a human no matter how strong or durable they would be. 1:33:10 I believe Oshino knew that only killing Kiss-Shot would return Araragi to being human again so that's why he gave him her heart and in that moment Araragi realized that. That's what I think he meant. I can be completely wrong but I can't think about any other explanation.
