When you talk about the binocular guy that is spotting the island, in this moment its portrait perfect here. When Sanji calls out the island nobody else could have seen it. We as the viewer have the bird eye view from far above the ship but that is the point. It is all about how high you stand, there is a specific formula to calculate when two ships can see each other on the ocean. When your eyes where bearly above see level, you could spot something that is 5 meters in hight in a distance around 10miles (1 nautical mile = 1,852 Kilometres) This is also an easy way to proof that this planet is not a frisbee :D
