Dionysus has the most canonical changes in his appearance because he's Zagreus in many renditions and is associated with rebirth, the different appearances would be to indicate the cyclical nature of his life and death. Similar with Hecate who is often associated with 3 stages of life. Most of them tho do tend to be pretty fixed in their depictions but I am not one for consistency.

Hey so I asked a friend who's getting their PhD in classics about this, and you're right! Me: "Quick classics question! Did the Greek gods have fixed or canonical human forms? Because I know they could turn into animals and mortals, but did that translate to general form-shifting as deities, or were their divine forms fixed?" Friend: "uhh sort of? depends on the deity the greeks don’t describe appearance in a great deal of detail very often in literature, except for certain attributes, and their art is kinda similar—like, people’s faces all look very similar, etc. so instead differentiation in form was mostly down to attributes their carried and their clothing and stuff some gods were notable for being portrayed in different ways—dionysus, for example, is variably portrayed as either a “youth” (a young man, no beard), or as a grown man with a beard and in general some gods were always youthful (eg. apollo) and some were always adult (eg. … basically everyone else except apollo) basically: they COULD appear as any sort of figure, but most did have a “canonical” form, it’s just that that form wasn’t super specific beyond certain attributes—hephaestus’s leg is another example but it wasn’t like, oh, poseidon always has black hair or whatever"
