In those olden days the Men who had children out of wedlock or affairs were known as bastards. Their surnames were for example in the north "Snow" for bastards and "Sand" for Dorne. They call former countries "Seven Kingdoms" before they were conquered and united under 1 rule under Aegon the conqueror. Hence the Seven Kingdoms. The Starks were kings of the North before Aegon Targaryen. Hope this helps a little.
