For the watermelon, the goal is not to make it salty, but rather to use salt as the flavor enhancer that our bodies treat it as. Should also help with very slightly breaking down the cell structure of the watermelon, making each bite even juicier. With just the right amount of salt [very little], it should make the watermelon taste more strongly, be more juicy and even feel sweeter than before. In a similar vein, you can add just about half a teaspoon of espresso powder to your chocolate cake batter. Won't make it taste of coffee, but instead will notably intensify the chocolate flavor.
