The ‘couple’ at the start are fake, paid by Gus to monitor the neighbourhood without arousing suspicion. They probably also stock the house with food and smuggle people in and out of the garage in their car. Gus also has a look-alike body double (guy passed him in the tunnel) who goes into the main house so if anyone is watching, Gus appears to be home while he’s actually safe in the other house. The whole setup is an elaborate ruse to keep Gus 10 steps ahead of anyone who comes knocking while keeping up the facade of a respectable local businessman with a nice house in a nice neighbourhood. Gus is a master at hiding in plain sight.

Kim mentions Taco Cabeza isn't far from Saul's new office at the end of this episode. In Breaking Bad, at the end of Season 1, when discussing where to meet Tuco for their first big deal. Jesse suggest "What about Taco Cabeza? Half the deals I've ever done have been at Taco Cabeza. Nobody ever gets shot at Taco Cabeza" Just a fun little easter egg lol

Its simple. Jimmy and Kim were the main characters in this early part of the Breaking Bad universe. Like Walt, nice and likeable.So they just had to break bad too.
