She was thinking about running away from Walt and the entire situation she was in and she was flipping the coin to see which state she was gonna run off to! She eventually moved the coin back to "new mexico" with her foot, which is where they are from. So she took the choice to stay with Walt instead of running away. Very underrated scene tbh
