I’m starting Dr. Stone soon, so I need your help regarding watching the opening and ending of S1. Which one(s) should I watch? If I shouldn’t immediately watch them, could you tell me on which episode is it safe for me to watch?

All you would see are characters that will be introduced in a few episodes. Personally I would say no, but watching the Op/Ed doesn't truly spoil any major plot points.
