That Ryou, or advanced armament haki, is the same that was used by Raleigh back on Saboady at the auction house, when he saved Cami the mermaid from her collar. Luffy just did the same for their collars this episode.

Just like a child throwing a tantrum over something they are not getting right away. So with her memories gone, this version of Big Mom (Olin), I assume she will not go into that state. At least not until she regains her memories, which she will sooner or later. I’m betting sooner haha.

That new haki was Ryou, what Old man Hyou has been trying to teach him (basically, advanced armament Haki). Also remember Rayleigh said, haki grows in the battlefield; Luffy about to die with Hyou made him grow.
