In Shirou's case, "sword" is a very broad term xD As long as Gilgamesh used "conventionalish" melee weapons Shirou could replicate them, unless Gilgamesh took out his spaceship or some other bizzare contraption

He exclusively used swords against Shirou instead of the countless other weapons he has at his disposal that would have made it impossible for our boy to counter. 3. He hesitated on drawing Ea. All of that because he was not willing to see him as a worthy opponent. PS: at the end UBW broke down because the Grail was seeking the greatest mana source around to feed his empty core, so it rushed for Gilgamesh. PPS: Archer is not a Guardian in this case, many people had this theory, but if he was he would have nuked the whole place, he simply escaped within an inch of his life and fed on small animals to keep himself "alive" thanks to Indipendent Action.

In original release of Visual Novel before it had any voice acting (and before first anime adaptation), the Archer's chant is also in Japanese. And original translation of his chant (and current Shiro's chant as well) is a bit different, and a bit more descriptive of their mental state. But I suppose the author decided that Engrish chant for Archer will just sounds too cooler, and that's what they've been going with since then
